Ok, So this is pretty simple thing in itself, but takes some time setting up, but once you got it going you'll literally have an infinite amount of money.
so this is what you do:
1. Get X amount of Cleric villagers. You need 1 Brewing stand per Villager. Each Cleric generates you a total of $36/hour
1.1. If you don't know how to get villagers, either you do 1.2 or 1.3
1.2 Find a village and transport the villagers back to your base with a boat, you just put the boat down on the ground and slowly push the villager towards it, and it should get in the
boat and you can slowly start rowing back to your base with it, and there you go, you now have a villager. Just repeat this until you have as many as you'd like
1.3 This one might be a bit trickier to do, but catch yourself a zombie villager, throw a weakness potion on it and feed him a golden apple, and there you go, you now have yourself a villager, and same here, you just repeat this process until you're happy with the amount of villagers you have.
2. Have them stay by their stations all the time (Keep them in a 1x2 area)
3. Make a zombie farm/grinder, there are a lot of tutorials on youtube how you make these, either if you have a spawner use that, or make a normal mob farmer, whatever you feel like.
4. Trade 32 Rotten Flesh (31 if you got it to Master) with the Cleric for Emeralds
5. Trade 1 Emerald for 1 Lapis with the Cleric, you get 6lapis out of this per Cleric, and you can do it twice per minecraft day.
6. Profit $$$




Some explanation to why this would generate you an infinite amount of money, in the new 1.14 update they changed how all the villagers in minecraft works, their trading etc. and the Clerics have an interesting trade where you'll always get 1 emerald for 1 Lapis, normally this would be a terrible trade, but since Lapis is the only thing that you can make money from it's currently the most valuable item on the server.
So what you do is get yourself a villager, make sure his doesn't have a profession, and if he do, you just remove the workstation and place down the brewing stand next to it and over time it'll change to a cleric, since that's the profession you get from a brewing stand.
When you're trading with them, you can only get 6 lapis at most per Cleric every time you trade with them, and their inventory restock twice every day, during a special tick time, so that's why you want to keep them in a 1x2 area, because they can't restock their inventory if they aren't standing next to their profession when that tick happens, so if you got them roaming around, you'll decrease your efficiency of how much lapis you can get, which means you'll lower your income. But if you're as efficient as you can be with this you'll gain $36/hour per Cleric if you're doing it right, so lets say you have only 5 Clerics, you'll be able to make $180/hour or $4320/day( or $2160/12hours if we're going to be a bit more realistic about it)
Something else you also want to do is set up a Zombie/Mob farm if you don't already have one, and I know, it's very easy to do, but you're going to want to make sure you're being as efficient as you can possible be with that one, so take your time, go around and light up as many caves around it as possible, the less places there are for mobs to spawn, the more are going to be spawning in your Zombie/Mob farm. It might seem tedious to do, but in the end, it's going to be so worth it when you're starting to make bank.

problem with villages is that often they are a long, long, long way from my base

It's not possible for you to be getting $36 per hour because each cleric will only give you 10 lapis per in-game day which is 20 mins. So the max per cleric is $30/hr. There are also far better sources of emeralds than rotten meat from a grinder. Also bear in mind that rotten meat is subject to inflation just like lapis, after 12 trades you won't be getting 1 lapis per emerald any more.
